WHY OCEAN WATER?
In short, because it improves the flavour of the gin by extracting the oils from the botanicals more efficiently during distillation.

Salt does not distill, so the gin isn’t salty, the liquid desalinates as it distills.

During the distillation process, ocean water is added to the potstill alongside the base spirit and botanicals (some of the more delicate botanicals go into the basket, but the more robust ones are in the liquid) this all cooks up over a certain period of time.

The flavours and oils are extracted during this process, turned into steam and as they cool down, the cooled liquid is A Mari.

The salt water breaks down the botanicals more efficiently which gives a very smooth, flavour packed gin, with none of the harsh mouthfeel present in most neat white spirits.

OUR STORY

We're slightly bonkers entrepreneurs, we like the outrageous and the innovative.
We wanted to do something that hadn't been done.

We're old friends from university days, and this whole idea started over several bottles of wine, which culminated in us buying a potstill at 3am on the internet, and quitting our jobs the next day to start distilling.

We wanted create a unique, beautiful gin, using a variable that wasn't limited to the botanicals selected for the recipe.
We grew up on different coasts and are both ocean lovers, so we started playing with the elements of the sea. We liked the results, so developed the idea of coastal gins, distilling using ocean water and botanicals that grow on the coastlines of the specific oceans.
As with great whiskies, the water plays an important role in creating a beautiful spirit. We work closely with the UCT Oceanography department to ensure our water is sustainable and pristine, and we are partnering with a marine conservation agency to give back, for every bottle sold, to the ocean.

We distill our gin in Cape Town, where the mighty Indian Ocean and Atlantic Ocean join forces.
